Thai Green Curry or Kaeng Khiao wan
Thai Green Curry or kaeng khiao wan as it is called in Thai.
Thai Green Curry is one of the most popular and well known Thai dishes.
I have used pieces of a Chicken breast in this version of Thai Green Curry, but you can as well use pork or beef.
You can also use almost any kind of vegetables you like. The only original vegetable used in kaeng khiao wan, is the Thai eggplant, but if you can not find it where you are shopping you can use another kind of eggplant.
You can regulate how hot you want the dish, by adding more or less of the green chili paste. If you add too much and it gets too hot, then add more coconut milk.
You can serve it with rice, which is the Thai version. But you can also serve it with potatoes or pasta on the side.
Personally, I add a lot of vegetables and eat it without anything on the side. It is also a good way to avoid carbohydrates if you are on a diet.
Thai Green Curry is very easy to make and a very delicious dish, definitely one of my favorites.
